The Steineggerhof kitchen is creative, fresh, modern, herb-loving, close to nature, colourful and healthy. With a focus on vegan and South Tyrolean dishes. Meat only plays a role in the main course.
For us, cooking is still a real handwork! our flavour enhancers are fresh herbs from the garden ;)
We are happy to consider special forms of nutrition such as veganism, and we will also cater for people with intolerances. We ask you to inform us in advance when booking.
Our kitchen: back to the roots, plant power, cook the mountains & from nose to tail
Convenience products, Knorr and similar are banned from our cooking pots! Freshly picked every day, herbs from our permaculture garden provide taste and fine aromas. We use healthy, fresh food that is free from chemical pesticides and 100% organic. We also make sure that as many ingredients as possible come from South Tyrol: you won't find any exotic ingredients or imported goods such as pineapple, avocado or cashew nuts here. Flavorful vegetables from our garden or from organic farmers in South Tyrol play the main role in the evening menu: you will be amazed at what vegetables can do. 95% of our dishes are purely plant-based: not a sacrifice, but pure enjoyment. Meat is only available as an alternative for the main course. And because it doesn't always have to be fillet or entrecôte, we buy animals whole, butcher them ourselves and use them entirely, thereby avoiding food waste. Once a week, we organize a "Veggie Day" and serve a purely vegan menu in the evening.
Vegan kitchen
2018: after 10 years Kurt Resch returns to the Steineggerhof kitchen. Together with daughter Natalie he now leads the kitchen team. Son Tom, future food technician, helps to work out new recipes in his spare time.
When the Reschs moved into the kitchen, the way of cooking was also completely changed:
Since then the meals are mainly vegan (son Tom and daughter Lisa are vegan). Meat is only available as an alternative for the main course. Every week ther e is a Veggie Day, where we serve our most delicious vegan dishes!
Protagonist of the menus: organic veggies
More than 60 % of the organic vegetables we use come from South Tyrol, the rest from other regions of Italy and we get some vegetables from Bavaria. South Tyrol is a mountainous region, so we are dependent on vegetables from the south, especially in spring and autumn.
Our main supplier is the company Biokistl Südtirol, from which we purchase about 4.5 tons of vegetables and 2.6 tons of fruit annually. Each guest eats over 800 grams of vegetables per day!
"Homemade" is not magic
In the Steineggerhof kitchen, as much as possible is homemade! We ferment, make juices, pickle, make our own jams, bake bread, make vinegar and, above all, experiment a lot. This gives us the best possible control over the quality of the goods and saves us a lot of packaging waste.
Hundreds of jars of tomato sauce, sauerkraut, kimchi, jams, compotes etc. are in the magazine just waiting to be opened! It will definitely never be boring in the kitchen ;)
Seasonal cooking: often a challenge
Honestly, seasonal cooking is sometimes not easy. Especially because we are now used to getting fresh strawberries, melons, tomatoes or grapes all year round. Organic products restricts us even more and so it can happen that, for example, South Tyrolean strawberries are only available for a month. But there are so many different kinds of fruits and vegetables that with a little creativity you can still conjure up varied and great dishes on the table.
...and if you only get cherries, cabbage or radishes for a short time, the excitement for this fruit or vegetable is even bigger!
Treasure chamber: herb garden
Our herb garden with over 40 different herbs and flowers is our treasure trove. Nothing can be so difficult to replace as fresh herbs and flowers! Every day we need the fresh taste bombs for our dishes, flowers to decorate the food or as homemade teas. Guardian of the herbs and flowers is grandma Marianna.
Intolerances
Intolerances and intolerances are increasing from year to year. For the kitchen team, this is an extra effort and a challenge: work must be done precisely. Knowledge and creativity are required. But our kitchen team does its best so that our guests can enjoy their vacation without stress despite intolerances.
We ask that you provide as much information as possible about intolerances/intolerances when making your request, so that we can consult with the kitchen team and make arrangements accordingly.
Depending on the situation, we reserve the right to charge a small additional fee for the extra effort. We ask for your understanding that we cannot take into account certain intolerances (such as celiac disease).
Organic breakfast
Enjoy your meal! A good, balanced breakfast gives you strength and energy for an adventurous day - which is very important for our active guests.
A rich and varied buffet with healthy organic products awaits you: fresh bread, homemade fruit spreads, various cereals, cream cheese, yoghurt, birch muesli, vegan spreads, vegan yoghurt, cold cuts and various cheeses, cakes, fruit and fruit juices and much more! ... and of course delicious organic an fair trade coffee from the coffee roastery Caroma (South Tyrol) and a large assortment of organic teas from Grandma Marianna :)
Morning mail
At the breakfast table you will always find our morning mail with the evening menu, recommendations for our South Tyrolean organic wines, hiking suggestions, weather report, events, recipes, tour suggestions, tips from Grandma Marianna and much more.
Lunch
The majority of our guests are very active, would like to experience our nature and landscape intensively and therefore are usually on a discovery tour at lunchtime ;) . If you should have a "Today I don't do anything" day and enjoy our SPA area "Terra", we offer small organic dishes like pasta or Kaiserschmarrn for lunch.
Dinner
Chef Sonja along with daughter Lisa, Franziska, Manuela and Erika will serve you a varied 5-course organic menu, where you can choose between a main course with meat or a vegan dish. At pleasant temperatures we have a barbecue on our terrace. Should it rain unexpectedly, we will organize a kitchen party.
Once a week there is a Veggie Day where we serve our most delicious vegan dishes. Depending on the season and the number of guests, we also organize theme evenings such as Halloween, mystery dinners with the theatre club, star cuisine, dessert buffets or starter buffets.
Organic wines from South Tyrol
We get our organic wines almost exclusively from small organic winegrowers from South Tyrol, whom we know personally. They use organic varieties that require as little or no pesticides for care as possible.
At the same time, the winegrowers rely on healthy soils for their organic wine through the formation of humus, and by fertilising with manure and compost they promote the diversity of species in the soil. In the fertile soil, strong vines grow, which absorb important nutrients for the formation of aromas for organic wine. Most wines are spontaneously fermented and vegan.
